Rack of lamb with salted butter

  • flat-leaf parsley
    1 bunch
  • fresh thyme
  • breadcrumbs
  • salted butter
    150 g
  • chervil, chives, and tarragon
  • shallots

Herbed butter is the best part of this tasty meat that needs to be roasted to perfection.

Wash the parsley, strip it and chop the leaves finely. Mix half the chopped parsley, 2 tbsp thyme, 2 tbsp breadcrumbs and 1 tbsp melted butter. Coat generously the square of this preparation. Melt 30 g of butter.

Place the square in an oven dish and drizzle with melted butter. Bake it in the oven at 200°C for 40 minutes. Meanwhile wash the herbs and chop them finely. You need a total of 5 tablespoons. Add the finely chopped shallots, then knead everything with the rest of the butter to obtain a cream. You can make this mixture in a blender. Put this compound butter in the fridge.

When the square is cooked, cut it into chops. Serve them on hot plates. season with salt and pepper.

Offer the compound butter separately.
