Arabesque of pears and arugula

Ingredients for 4 people:200g arugula, 4 ripe Comice pears, sugar syrup, 2 teaspoons cider vinegar, salt, pepper, fleur de cherry (or other),

Peel the pears, remove the seeds, cook in a syrup at 30°b (tant pour tant), leave to cool and cut each pear into eighths. filter the cooking juice and reduce by 3/4. Book.

Wash the arugula, wring it out.

Mix the syrup with the vinegar, salt and lightly pepper.

Lay the pears side by side in the center of the plate on a bed of rocket leaves, add a few flowers, coat the pears with the pear vinaigrette.
