Chocolate and orange log

Ingredients for 8 people

  • 4 eggs
  • 150g caster sugar
  • 50 cl of cream
  • 2 oranges
  • 3 tablespoons orange juice
  • 1 tablespoon of Grand-Marnier
  • chocolate shavings
  • icing sugar

Preparation

Beat the yolks and 75 g of sugar. Heat chocolate and orange juice. Smooth. Add the yolks-sugar mixture. Beat the egg whites by adding the rest of the sugar. Add them to the mixture.

Cover the baking sheet with buttered parchment paper. Spread the dough on it and bake for 25 minutes in a preheated oven. 5 (150°C). Remove from the oven, turn the dough over on a clean damp cloth, and peel off the parchment paper. Then roll the biscuit in the damp cloth and leave to cool.

For the garnish, pour the cream into a bowl placed in a water bath of ice cubes. Whisk until the cream becomes frothy. Add the Grand Marnier.

Unroll the biscuit on icing sugar. Spread 2/3 of the filling, leaving 2 cm without ganache on the edges. Cut the orange slices into small quarters and spread them over the spread cream. Roll up the biscuit, decorate it with the rest of the cream and the chocolate shavings.

Put this real Yule log in the fridge for at least 2 hours before serving!
