Mix the cocoa, sugar and vanilla and add them to 1.5 l of water. Bring to a boil, stirring, and simmer for 5 minutes over low heat. Switch off and let cool.
Add the 90° alcohol to the cooled mixture, mix and pour into an airtight container. Leave everything to rest for at least 3 weeks away from light.
When the rest time is over, filter the mixture and pour into bottles. Stopper with corks and keep the bottles lying down in the cellar or in a dark and cool place.
Enjoy as an after-dinner drink with crushed ice, in a cocktail or in a sauce around a coffee cake...
Filtering is done very well with coffee filters in a funnel.
Pretty personalized labels and pretty bottles will enhance the presentation!
